The Grand Marnier plays a big role in the flavor of these muffins. If you don&amp;rsquo;t want to use alcohol, you could try the muffins with orange juice with a spoonful of orange extract added but they won&amp;rsquo;t have the same dynamic flavor the originals have. (I haven&amp;rsquo;t tried it personally, so if you do, let us know in the comments what you did and how it worked out.) One reader in the comments mentioned she&amp;rsquo;d added some orange marmalade (which is made with bitter oranges) which got me thinking that maybe you could swap out the 1/3 cup orange juice/Grand Marnier with 1/3 cup of orange marmalade, chopped fine if it has large shreds of orange peel in it.&lt;br /&gt;

You could add a few drops of vanilla or almond extract to the batter if you wish, either way, although my French taster said not to touch them or do anything else &amp;ndash; that they were perfect.&lt;br /&gt;

Lately I&amp;rsquo;ve been experimenting with almond flour. The recipe is easy to make too. 1 teaspoon baking powder&lt;br /&gt;
Smallest amount of vanilla extract&lt;br /&gt;
1 tablespoon vegetable oil&lt;br /&gt;
7- 8 packets of Splenda&lt;br /&gt;
1 tablespoon of sparkling water&lt;br /&gt;
Walnuts &amp;ndash; optional&lt;br /&gt;
As always with mix the drys and the wets(except the sparkling water) separately, then add the drys into the wets, make a smooth mixture. I must add and explanation here. I bought some blanched almond and had them grind-ed this time so there are very prettily light color this time.&lt;br /&gt;
Before putting in the oven, sprinkle some coconut shavings on the muffins. They will get crunchy on top and add a different texture into the muffins.&lt;br /&gt;
&lt;br /&gt;
Bake at a pre-heated oven at 180⁰C for 10 &amp;ndash; 15 minutes. Varrying from oven to oven, check at 10 minutes, poke the muffins with a tooth pick and if it comes out dry you are good to go, if there is still. Some wetness or you want to bake them more to make the tops&amp;nbsp; darker color,&amp;nbsp; bake for another 5 minutes.&lt;br /&gt;
&lt;br /&gt;
These muffins are very fulfilling and they are so good at tea time or any time you want some low carb snack/dessert.&lt;br /&gt;
&lt;br /&gt;
In this recipe with the help of the cream, the muffins were a little dense inside, in my other recipe they were more on the lighter side.&lt;br /&gt;

This soup is wonderful for so many reasons. First of all it only requires about 15 minutes of hands on time cooking it, the rest of the time is spent bubbling away in the slow cooker. Start by dicing up an onion and browning it along with some lean ground turkey in a skillet. Just like you top tacos, this soup needs to be topped with some yummy fixings! I chose to top mine with cheddar cheese, cilantro, avocado, and plain Greek yogurt ( I almost alway use this instead of sour cream). Of course you could crumble some tortilla chips on top as well and that would just be the icing on the cake&amp;hellip;err&amp;hellip;taco, you know what I mean. As summer blisters on, I find the need to be drinking water increasing and my interest decreasing.&amp;nbsp; It becomes a chore.&amp;nbsp; What I&amp;rsquo;ve learned to combat that is to add flavor.&amp;nbsp; I love infused water and tea and try to keep a supply of fresh herbs at the ready for infusing.&lt;br /&gt;

Regular readers will know my tale of woe regarding an abundant, rampant crop of mint that haunts me at this time of year.&amp;nbsp; A brief hesitation regarding putting the tiny mint plants in a pot or stoned-in raised bed had rendered enough mint to make Mojitos for most of Northern Colorado.&amp;nbsp; The good thing is that I love mint, though I tend not to consume pounds of it at a time.&amp;nbsp; A few sprigs added to some fresh water quickly yields a refreshing drink found far more cheaply than the cool bottles found at the store for $2-3 each.&lt;br /&gt;

Something I&amp;rsquo;ve always loved to do is make Sun Tea.&amp;nbsp; As it sounds, a few tea bags plopped in a jar full of water brew at Mother Nature&amp;rsquo;s hand to create a wonderful ice tea in a few hours.&amp;nbsp; Of course it&amp;rsquo;s quicker to boil water and make tea the traditional way then ice it, but Sun Tea is summertime for me.&amp;nbsp; Taking mere seconds to add ingredients to the jar, I love having it on my front porch ready to drink in a few hours.&amp;nbsp; I keep a spigot jar of it in the fridge most of the summer.&lt;br /&gt;

I get bored easily so like to experiment with refreshing flavors, combining tea and herbs.&amp;nbsp; Fresh herbs are great though not always available.&amp;nbsp; For the batch I&amp;rsquo;m sharing today I added dried lavender and dried lemongrass with some green tea bags and fresh mint.&amp;nbsp; The flavors are subtle and unique, making an interesting and refreshing tea.&amp;nbsp; Dried herbs can be placed in a loose tea ball or I simply wrapped them in a double layer of cheesecloth and tied the bundle closed.&amp;nbsp; I squeezed the bag a few times during the soaking to further release the herbal flavors as the bundle holds the herbs more tightly than a tea ball.&amp;nbsp; Served with a sprig of fresh mint and there is nothing better to sit on the porch at dusk, reflecting on the day, watching the colors change in the summer sky.</description>

I prefer to use Niulife coconut amino sauce and coconut vinegar as they are organic, non GMO, preservative free, vegan and gluten free. I was ready for a lift today. Yesterday was a hard day. I got to close some chapters of our lives.&amp;nbsp; My son finished his high school tennis career. I was sentimental about that. We are happy to have good memories and happy he is free of pain again. I don't like saying goodbye though. New chapters are opening and they will be good. I just always get sentimental when I turn the page to the next chapter &lt;br /&gt;
